About Tree’s Restaurant & Catering
Tree’s Restaurant and Catering is located at the gateway of Oregon wine country in the beautiful small town of Sherwood. Trees offers a unique fusion of Italian and Creole flavors and a mix of NW local ingredients. The resaurant is nestled in the back of a beautiful wood preserve which offers great views from the dining room and especially from the patio. Our family restaurant is owned and operated by Executive Chef Shannon Johnson who passionatly delivers her unique and delicious flavors.
Chef Shannon grew up in Fort Atkinson, Wisconsin and worked her way down the east coast. She landed in Louisiana in her early twenties where she enrolled and graduated from the Culinary Arts Institute of Louisiana in Baton Rouge. Her culinary education placed her in one of the most prominent Southern Italian family restaurants, Gino’s, located in Baton Rouge, LA.
Chef Shannon learned Southern Italian cooking from one of the best chefs, Mama Marino, while at the same time being immersed in the New Orleans Culinary scene for several years before moving to the Northwest. Working at Gino’s prepared her with the skills to open and manage a successful restaurant.
When Chef Shannon relocated to the Northwest in 2001, she found Sherwood the place to call home. She worked for Hayden Enterprises which gave her to the opportunity to open two local
Restaurants and the experience working with one of the area’s most well know restaurateurs and advisors, Bill Hayden. Chef Shannon started by opening the restaurant and writing the menus for Rivers, now Aqua Rivera, in the famous Johns Landing neighborhood of Portland. She then offered her experience at Hayden’s Lake Front Grill in Tualatin while opening a restaurant in the Beaverton area, Pesaro’s Italian Grill.
The dream of owning her own restaurant was not far off. In 2003, Shannon opened J2 Catering, Inc. in Sherwood Oregon. She ran this business successfully for 5 years offering catering for events such as weddings, BBQ’s, corporate lunches etc.. One thing was missing, the restaurant lifestyle, and she knew it was time to take the leap of faith and open her own restaurant. Tree’s was founded in the SW part of Portland in the PacWest building. Here she was able to combine the catering and the restaurant into one culinary and event space experience for her clients. Unfortunately, this location lacked the family and neighborhood feel she was seeking. Without a viable dinner program she chose to take a step back and relocate
her vision. For three years Tree’s thrived as a lunch, catering and happy hour destination for the
financial neighborhood. It was a great experience. It was time to make the change she dreamt about and make Tree’s “A neighborhood restaurant” as she had envisioned. There could be no better place to pick than her hometown of Sherwood. Now Trees has become the neighborhood restaurant where ingredients and products are locally sourced from hometown farmers and fellow small businesses.
